1.Scandinavian Recipes: Plum Tapenade

I make this mixture using Norwegian olives. Are there such things? Yes, if you pickle unripe plums they will be like olives. You can also use green olives, but then they wouldn't be Norwegian olives.

Ingedients:1 dl. (3,9 fl.oz.) pickled plums or green olives

8 tinned sprats

1 tbs. finely chopped parsley

2 tsp. finely chopped onions

4 tbs. olive oil

Juice and peel from 1 lemon

Salt and pepper to taste 

Preparation:

  • 1 Place all the ingredients in a food mixer and mix until you obtain a coarse purée.
  • 2 Add salt and pepper to taste.
  • 3 Serve on toasted white bread or crispbread.

 

Oven-Baked and Cold-Smoked Chicken with Onions

Smoking is a great way of preparing chicken and you can either build your own smoking oven (like I have) or you can just sprinkle a few wood chips on a charcoal grill and put the lid on. I also have a small hand-held food smoker called Smoking Gun which is not very expensive and is extremely useful!

Ingredients:1 cold-smoked chicken, or one which has been smoked slightly using another method

100 g. (3,5 oz.) butter at room temperature

10 small shallots

2 garlic corms

2 bay leaves

Salt and pepper

Preparation:

  • Servings: 4
  • 1 Rub the chicken with butter and season with salt and pepper.
  • 2 Place the chicken in a warm iron casserole dish with the onions, garlic and bay leaves.
  • 3 Brown the chicken well on all sides. Put the lid on and place the chicken in the oven at a temperature of 120˚C (248˚F) and roast for one hour. The chicken will be ready when the juice runs clear when pricked with a knife.

 

Raspberry Drink with a Taste of Smoke and Carbonated Blueberries

You will need an old-fashioned (or new) cream or soda siphon for making this drink.
Enough for 1 glass.

Ingredients:

4 cl. (1,4 fl.oz.) vodka
½ cl. (0,17 fl.oz.) malt whisky
4 cl. (1,4 fl.oz.) unsweetened raspberry juice
1 cl. (0,3 fl.oz.) syrup
1 cl. (0,3 fl.oz.) Roses lime
1 dl. (3,4 fl.oz.) blueberries                                                                                                               Preparation:
  • 1 Place the blueberries in a cream siphon and add two CO2 cartridges. Leave to stand for 20 minutes.  This allows the blueberries to be filled with filled with carbonic acid.
  • 2 Fill a shaker with ice and add all the ingredients.
  • 3 Shake well and pour into a cocktail glass. Add the carbonated blueberries to each drink.              Smoked Char with Blue Cheese and Pickled Quinces
    If you are unable to find any quinces you can use pickled apples or plums. They will taste slightly different, but are also good. I smoke the fish in a small ABU smoker. You can also smoke the fish in a fireplace, or use pre-smoked fish. (This also works with mackerel.)

    Ingrdients:

    Four 250 g. pieces of char
    50 g. blue cheese
    2 tbs. pickled quinces or other pickled fruit
    2 tbs. sour cream
    3 tbs. chopped chives
    1-2 tbs. finely chopped onions

      Preparation:

    • Servings: 4
    • 1 Place the fish in an ABU smoker, add wood chips, light and allow it to smoke for 10 to 15 minutes until the fish is ready. It should be cooked well enough so that the meat easily falls away from the bones.
    • 2 Mix together the sour cream, onions and chives.
    • 3 Serve the fish with the sour cream mixture, the blue cheese and the pickled quinces.
